Frequently asked questions
Good questions, answered.
Why cook the pork covered for most of the time?
Covering the pan traps steam, which helps break down the tough connective tissue in the shoulder for a tender result.
Can I shred this pork instead of slicing it?
Yes, once tender it shreds easily with two forks, similar to pulled pork.
