Sheet Pan Shrimp Fajitas

This sheet pan dinner roasts shrimp, peppers, and onion together with fajita seasoning for an easy, mostly hands-off meal ready in about 20 minutes.

  • 2bell peppers, sliced
  • 1yellow onion, sliced
  • 2 tablespoonsolive oil
  • 2 tablespoonsfajita seasoning

  1. 1Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. 2Toss the peppers and onion with 1 tablespoon olive oil and half the fajita seasoning, then spread on the sheet pan.
  3. 3Roast for 8 minutes, then push the vegetables to one side.
  4. 4Toss the shrimp with the remaining oil and fajita seasoning and add to the empty side of the pan.
  5. 5Roast for another 6-8 minutes, until the shrimp are pink and opaque and the vegetables are tender.
