  • 1/2yellow onion, diced
  • 1 tablespoontaco seasoning
  • 2.5 cupsred enchilada sauce
  • 10corn or flour tortillas
  • 2 cupsshredded cheddar or Mexican-blend cheese

  1. 1Preheat the oven to 375°F (190°C).
  2. 2Brown the ground beef with the onion in a skillet over medium-high heat; drain excess fat and stir in taco seasoning and 1/2 cup enchilada sauce.
