Shrimp Fried Rice

This shrimp fried rice combines tender shrimp with vegetables and day-old rice for a fast, restaurant-style stir-fry ready in about 20 minutes.

  • 1 lblarge shrimp, peeled and deveined
  • 4 cupscold cooked rice (day-old works best)
  • 2 tablespoonsvegetable oil
  • 1 cupfrozen peas and carrots
  • 2eggs, beaten
  • 2 clovesgarlic, minced
  • 3 tablespoonssoy sauce
  • 1 teaspoonsesame oil
  • 2sliced green onion
