Good questions, answered.

Do I have to refrigerate it overnight?

Overnight soaking gives the best texture, but a minimum of 1-2 hours in the fridge will still work in a pinch.

Can I freeze leftovers?

Yes, cool completely, then wrap and freeze individual portions for up to 2 months; reheat in the oven or microwave.
