What you'll need
- 1 large (about 3 lbs)butternut squash, peeled and cubed
- 2 tablespoonsolive oil
- 1/2yellow onion, diced
- 2 clovesgarlic, minced
- 4 cupsvegetable broth
- 1/4 teaspoon eachground cinnamon and nutmeg
- 1/2 cupheavy cream (optional)

Let's cook
- 1Heat olive oil in a large pot over medium heat and sauté the onion for 4-5 minutes until softened.
