Butternut Squash Soup

This butternut squash soup is silky and lightly sweet, blended with warm spices into a comforting fall soup ready in about 40 minutes.

  • 1 large (about 3 lbs)butternut squash, peeled and cubed
  • 2 tablespoonsolive oil
  • 1/2yellow onion, diced
  • 2 clovesgarlic, minced
  • 4 cupsvegetable broth
  • 1/4 teaspoon eachground cinnamon and nutmeg
  • 1/2 cupheavy cream (optional)
  • to taste salt and black pepper
  1. 1Heat olive oil in a large pot over medium heat and sauté the onion for 4-5 minutes until softened.
